Consider the season

Remember the first simple rule: the fresher  vegetable, the better. It seems logical to choose seasonal vegetables for your menu. We eat greens in the summer, buy pumpkin in the fall, and avoid cucumbers and tomatoes in the winter because they are "tasteless." In doing so, you are absolutely right. The fresher the vegetable, the more aromatic and tasty it is.

Touch vegetables before buying

Hardness or softness, elasticity or lethargy are all signs of freshness of the vegetable. Wouldn't it occur to you to buy a sluggish and loose radish or a tomato as hard as a stone? That's it.

Taste it

If you can (or can't, but really want to), taste the vegetables. In the markets, they often give you a try just like that. Do not be lazy and do not be shy: trying a vegetable, you will save your dish from failure and spend money wisely.

Talk to sellers

Talking to those who sell you vegetables is necessary to understand when the product was posted on the counter. Of course, if you ask head-on: "Is this today's?" – you will be lied to in the forehead in the same way.

You can ask when there will be a new batch of vegetables ("Today there is no money, but I really want to buy from you next time"), ask about the difficulties in the work - in general, in a roundabout way to get the information you need.
